Ingredients
1 serving- 20g Broccoli
- 50g Capsicum
- 50g Green String Beans
- 2ml Lemon Juice
- 100g Mushrooms
- 0.5Tsp Olive Oil
- 20g Red Onions
- 30g Red Quinoa
- 50g Zucchini
Method
- Add water and quinoa to a saucepan and heat until boiling, then reduce heat, cover, and simmer for 5 minutes. Drain quinoa if necessary.
- In a non-stick pan add coconut oil, onion, garlic, selected spices and stir. Add all remaining vegetables.
- Once the vegetables have softened, add the quinoa and stir together.
- Finely chop your selected fresh herbs and add to the dish along with squeezed lemon.
